As the knife weapon is disabled due to abusing I was wondering if you could RP it, using one, for stabbing and such.

Of course. Almost everyone RPs using a knife, it's used mostly for the Omertà Traditions in Italian mafias.

Ofc you can RP an knife, I've rp'ed alot of times using an knife tho.

Yes, i'm pretty sure you can. Don't "spawn" it IC, RP buying it somewhere, or something.
