Ok so when ever I join the server my resolution and controls keep resetting to default, is there anything I can do to stop it? I've tried launching the game as single player and setting it there and through the SA:MP launcher. It's getting annoying now.

Change it and then go to your folder, right click on your gta_sa and open properties. Afterwards tick the "read only" box and it should stay.
